1 teaspoon lemon juice (optional)
Instructions to make Left over Roti Chinese bhel
- Roll the roti and thinly slice all the rotis.
In a pan on medium heat add 1 tablespoon oil and let it heat. Add half the roti and roast until crispy while tossing over. Repeat with the second batch. Set aside. - In another wide bottom pan heat 2 tablespoon of oil on low heat. Add in 1/4 cup chopped spring onions and sauté for a minute or so. Add in cabbage, carrots and capsicum and mix well. Stir fry on medium heat for 5 minutes.
- Reduce the heat to low and add chilli sauce and soy sauce and mix well. Add salt to taste and black pepper and mix well. Turn off the heat. Add 2 tablespoon spring onions and mix well.
- In a mixing bowl take the fried rotis and add all of the stir fried vegetables.
Add roasted peanuts, chopped tomatoes, 1 tablespoon coriander leaves and 1 tablespoon spring onions. Add lemon juice if preferred. Mix well and garnish with the remaining coriander and spring onions. Serve immediately and enjoy.
You can add tamarind or green chutney and sprinkle some sev if preferred.
