Instructions to make Vegetable Stir Fry

  1. First of all parboil baby corn and green beans and cut them. Wash mushrooms and slice it. Wash and cut other vegetables into julienne or thin strips.
  2. Now heat 2 tbsp oil in a pan and add onion and bell peppers. Stirfry it for 2 minutes then add carrot and cabbage to it and again stirfry everything for another 2 minutes.
  3. Now add baby corn and green beans to it and stirfry for another 2 to 3 minutes on high heat. Now take out all the vegetables in a bowl.
  4. In the same pan, heat 1 tbsp oil and add finely chopped ginger, garlic and green chillies to it and saute it until it changes its colour. Now add chopped mushrooms to it and cook for 2 to 3 minutes on medium heat. Now add salt, pepper and soya sauce to it and mix everything well.
  5. To the mushrooms, add all other vegetables and give it a good stir. Cook for a minute on high heat and turn off the heat. Add chopped spring onion and mix.
  6. Vegetable stirfry can be served as a side dish with a portion of rice or noodles. It can be even eaten on its own as a light meal.
