  12. 1/2 tsp ground ginger (you can use 2 fingers of freshly grated ginger as well)
  13. 1/3 cup water
  14. Stir-fry
  15. 1 cup roasted cashews (I won't use peanuts for Kung Pao)
  16. 5 cloves garlic, crushed & minced
  17. 1 bell pepper, cut small
  18. 2 stalks scallion/green onion
  19. minced chillies, red pepper flakes, or chilli flakes
  20. salt
  21. vegetable oil

Steps to make Kung Pao Chicken

  1. If your cashews are unroasted, roast them first by frying in the pan without oil. Make sure to stir often.
  2. Cut the chicken into 1 cm cuts. Put them in a bowl with all the chicken marinade and let it sit for 15-20 minutes.
  3. Heat a large non-stick skillet. Put in vegetable oil and spread evenly. After the oil is hot, add minced garlic and bell pepper. Sauté until the bell pepper is tender, around 5 minutes.
  4. Put the bell pepper aside. Put in the cut, marinated chicken and fry until the chicken is cooked through.
  5. Add in the cooked bell pepper, the sauce, and the roasted cashews. Reduce the heat and cook until the chicken and vegetables are warmed through, and the sauce is thickened to your liking.

    Add the chilli/pepper flakes/chilli flakes according to your liking as well.
  6. Add in the scallion ~30 seconds before finishing (I forgot though, hahaha)
  7. Enjoy with rice and other vegetables such as garlic sautéed gai lan I posted here!
